My name is Matt, and I enjoy baking. I also believe quality bread is becoming (tragically) less affordable. Support my mission to provide YOU with affordable, quality bread made with all organic ingredients. Based in Grand Junction, Colorado, orders can be delivered locally and shipped statewide.

Why should you like my bread?

All flours that I use are organic and locally sourced. Other ingredients that I use less often will also be sourced organically as often as possible.

All breads that I make are inspired by traditional French and Italian techniques. These techniques
promote more earthy and subtle flavors
emphasize minimal ingredients
are tested and refined by generations.

All of my breads use some kind of “preferment” - a mixture of flour and water that independently ferments anywhere from 6 to 36 hours. In the case of sourdough starters, or levain, these cultures are developed for weeks.
The goal in either case is to develop some culture of natural yeast, acid, and bacteria. This benefits the bread dough in three major ways:
Contributes to a natural leavening (rising) of the dough.
Improve the flavor of the dough.
Improve the shelf life of the finished bread through a natural method of preservation.
